Here's one I'm sure maybe 2 or 3 people know in the world outside of me, but here goes:Team buddies
Imagine if Starcraft and Bomberman had an illegitimate child that liked to run around and cause chaos. Ok, ok, a bit far fetched, but hey, that's as close a comparison as I can give to Team Buddies. The concept is this: you're these sorts of capsules (called "buddies") running around and stacking crates together at your home base to build weapons, vehicles, and other buddies to help you fight other teams of buddies. The game's fast-paced and fun, and has a slightly worms-ish sense of humor (though the weapons aren't as wacky), with a bright, family-looking color palette. The single player mode is relatively lengthy, with over 30 missions that each yield maps, game modes, weapons and skins for multiplayer.
The game is best as a party game; multiplayer modes include "domination" (think King of the Hill), capture the (insert animal here), deathmatch, and bombball (that one's a long story to explain). Sure, it's really old, and it's practically impossible to find, but Team Buddies is fun as heck, especially with the varied weapon "sets" (basically, in each one different combinations of crates yields a different weapon) you get by progressing through the single player game.
Overall, it's just plain fun.

Skullmonkeys and N2o are my two entries. If you're familiar with Neverhood, you'll know what Skullmonkeys is. N2o is a trippy tube shooter. I had so much fun with that back in the day.
Lemmings 3D - Probably my favorte puzzle game ever. The mind breaking levels plus the pop-referance of the late 90's made this a treasure.

Quality for me is the old MGS games and probally things classic such as spyro and crash bandicoot sure there not hard but they entertain for hours and hours. I dug up Crash Bash and me and my friend burned up about 15 hours.

Resident Evil 1-3...3 you cannot go wrong with that. Side step and auto aim! One of my fav parts when Nemesis grabs Brad Vickers "S-S-S-S-Stars!!!"
Hmmmm Iron and Blood, nothing wrong with that game.

Swordmaster:Vagrant Story. It's a very hard game and I haven't gotton far into it but I thought it was very enjoyable.
Don't give up on VS, once you get the right weapon built and right armor set, it becomes MUCH MUCH easier and that is when the real fun starts.
The game becomes the *real* game after you beat it once, the new areas open up and you can get the real high level gear

And of course I lost my copy of TM2 and my friend gives me TM4 which is not nearly as good. Ever played Rogue Trip, that game was similar and if I remember correctly was a fun multiplayer game.

**** yeah! Skullmonkeys and The Neverhood are two of the best games ever. I also managed to buy the soundtrack to both games off of the artist's website a few years ago. Great stuff.
EDIT: Hex, I never managed to beat Vagrant Story, but thanks for the info. I never knew it had a sort of uber-New Game +. Now I have a copy on the way and I can't wait to play it again.

I'd like to second the Einhander suggestion. My friend and I almost came to fisticuffs once because I insisted on using a different control scheme than the default, and we would rotate the controller depending on who would lose, resulting in the person having to change the control scheme each time I played. Pain in the ass, yes, but I said that's what the other control schemes are there for! Of course, this was back when developers didn't have nice touches like letting you change the scheme in the pause menu.....you had to go alllll the way back to the menu screen to do it.
Nevertheless, a very fun game. Had some great battles.
I'd also add to the list WipeoutXL. Not sure if it's underrated, but it hasn't been mentioned. It doubled as having a great sountrack that you could listen to in your CD player. ;)
