I never made it but it took my brother over a year to beat Melbooframa (is that how you spell it) the final boss in Legend of Dragoon. Great game by the way.
I was playing Gradius III on the SNES a few weeks back. Even on medium difficulty the game is pretty hard, and some of the bosses can be pretty tricky, but the final boss was so simple I thought it was a fake out for a much tougher battle. Here is a video of the final battle.

Another cadidate might be Dracula in Simon's Quest, never played it myself but the battle with him just shows how weak the game was.

Call of duty 4's end boss? was extremely amazing that you got to put some bullets into that murdrer but it was so easy
not truely a boss but this frickin rock in Dead Space, i keep dying before i finish getting the bomb planted on it!!!
The final sequence in Fallout 3 felt pretty much phoned in (even with the hysterically anti-commie giant robot). Especially with how badass the final sequence was in Oblivion by comparison.

I was dissappointed witht the final boss in Dead Space, just a bit to easy. Just glad the rest of the game was so friggin badass.
The final boss in Final Fantasy IX.Great game all the way and you have this final boss that comes out of nowhere.He is never mentioned in the story, is never foreshadowed he just comes out of nowhere to be the final boss.
Ares, the final boss in the First God of War. That one gave me fits on the harder difficulty setting. Plus it was on our anniversary, so after I finally whipped his ass, I got my ass whipped.
