Elder Scrolls, Zelda, oh and what about KOTOR? Or even the original Final Fantasy. All of those revolutionized the way we play games.

well thats why it revolutionalized it, the COD series has revolutionalized the whole FPS based off of war genre.

I think that's a bit overstated but that's just my opinion. CoD's 2-3 weren't very good.

Why hasn't Half-Life (both of them) been mentioned?

That and Portal, even though we haven't seen many immediate changes I think Portals impacts will be seen in the coming years.

On a side but relate note, Valve is the shit.

Doom (although an argument can be made for Wolfenstein)

KotOR (for spawning its own twist on RPGs. Games that wouldn't have been without KotOR:  Mass Effect/Jade Empire)

Resident Evil

System Shock (although I thought Deus Ex was better, as was Bioshock)
